Filling:
1 cup chopped bell pepper (40)
1 1/2 cups [frozen] spinach (56)
1 clove garlic (5)
2 scallions (15)
4 egg whites (66)
2 large eggs (150)
1/2 cup unsweetened soymilk (50)
5 tsp. dijon mustard (25)
2 tsp. chili powder (5)
Crust
1/2 cup [dry] oatmeal (130)
2 tbsp. wheat germ (50)
"Fat-free" cooking spray (5)
Chop the garlic, scallions and bell peppers (red or orange ones look nicest.) Thaw the frozen spinach, either in the microwave or on the stove, but don't add any additional water. Place all the vegetables in a mixing bowl and add the eggs, egg whites and soymilk. Beat together with a fork or whisk. Stir in the mustard and chili powder.
Preheat the oven to "Broil" or the highest setting and in a separate bowl, mix the oatmeal, wheat germ and about 2/3 cup water. Microwave for about 1 minute, until it bubbles and thickens (might need more/less time or water, depending on your microwave.) Cover an 8"x8" square pan with cooking spray and press the oatmeal mixture into the pan with your fingers so it covers the bottom evenly. Put it in the oven for about 5 minutes, or until the crust appears more...crust-like and less "just some oatmeal in a pan"-like.
Take it out of the oven and pour the filling on top of the crust. Turn the oven down to 350 degrees F and bake about 40 minutes, or until firm in the center.
