Bell pepper half (cut longways) = 20 cal
3 tbs. refried beans = 54.6 cal
1 tbs. mozz cheese = 20 cal
2 tbs salsa = 15 cal
Fill Bell Pepper half with refried beans and top with cheese. Bake in dish with water in it (about halfway up the bell pepper - helps it cook right) in oven @ 350 until desired texture. (I like mine soft.)
Top with salsa and enjoy.
You can make a bunch at one time and leave them in the fridge for later during the week. They microwave well.
